Chicken gizzards are a popular organ meat (giblet) widely enjoyed across global cuisines, including African, Southern American, Asian, and Latin American cooking. As a specialized, highly muscular organ used by birds to grind down food, the gizzard contains almost no fat, resulting in a lean, thick meat with a distinctly firm, chewy bite and a rich, deeply meaty flavor.
Because of their dense muscular structure, gizzards require careful preparation to achieve optimal texture. They shine brightest in slow-cooking methods—such as simmering, braising, or pressure-cooking in rich, spiced gravies and stews—which break down the tough muscle fibers until the meat becomes tender and succulent. Alternatively, gizzards are frequently simmered first to soften, then marinated, breaded, and deep-fried for a classic crispy, crunchy snack, or tossed onto skewers and grilled over high heat for street-food-style delicacies.
